Gomphrena globosa, commonly called Globe Amaranth, have tiny true flowers that protrude from layers of brightly colored papery bracts that form 1-inch clover-like flowerheads.

The whole flowerhead is edible, but is rather tough in texture, and is better used as a garnish or brewed for tea.

The tea has a sweet, mellow flavor and is rich in phytonutrients!
