Gomphrena, commonly called Globe Amaranth, have tiny yellow flowers that protrude from layers of brightly colored papery bracts that form 1-inch clover-like flowerheads. The whole flowerhead is edible, but the texture is a bit tough. Use as a garnish or brew in tea!
